Picadillo made with Papa Georges Reduced Fat Pork Sausage


• 2 12-oz package of Papa George’s Reduced Fat Pork Sausage Roll (Regular, Sage, Hot, or Italian)
• 4 bay leaves
• 2 cup of sherry wine
• 2 quart of plain tomato sauce
• 1 cup of green olives (optional)
• 1 cup of small diced fried potatoes (optional)

Cooking Instructions

Crumble sausage and cook to about 160 F.
Add bay leaves and sherry, stirring to remove brown sausage bits from bottom of pan. Bring to simmer and reduce by three-quarters which should take about 10 minutes.
Add tomato sauce. Cook on low heat for 30 minutes.
Add at the end (optional) green olives and potatoes.

Serve with rice (white or brown) and a side of fried plantains if you like.

Makes about 4-6 servings.
