1 pound Papa George’s All Natural Italian Sausage (reduced fat)
One-half of large onion, diced
½ Tsp minced garlic
4 8” gluten free tortilla wraps (flour or corn are optional)
½ cup sliced red peppers
1 ½ cups mozzarella cheese
Salsa or marinara sauce for dipping
1. In large skillet, brown sausage. Once browned, add diced onions, garlic and pepper. Cover and cook over low heat, stirring occasionally. Cook until peppers are tender. Drain fat off the mixture.
2. Heat another skillet over medium heat and spray with cooking spray. Place tortilla in skillet and cover evenly with sausage mixture. Sprinkle 2 Tbsp mozzarella cheese over the mixture and top with a second tortilla. Spray it lightly with cooking spray. Cook for about 2 minutes or until tortilla is golden brown. Flip the tortillas and cook second side for another 2 minutes or until it’s brown. Remove from skillet, slice into 4-6 wedges and serve with salsa or marinara sauce.
